There are two kinds of people in this world.

Those who love crispy apam balik and those who love the fluffy ones.

Whichever type of person you are, one thing is for sure - Malaysians love their apam balik.

When walking through a pasar malam or Ramadan bazaar, you're bound to find at least one stall selling the delicious snack!

Although it looks complex to make, Seismik Makan came up with a pretty simple recipe that gives similar results

INGREDIENTS:
- 250g flour
- 1/2 cup sugar
- 1/2 teaspoon bicarbonate soda
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla essence
- 600ml water
- Butter
- Brown sugar
- Peanuts (roasted and crushed)
- Creamy corn/peanut butter (Optional)

Here's how to make crispy apam balik:

1. In a large bowl, add the flour, sugar, bicarbonate soda, salt, baking powder, vanilla essence, and water. Mix it all together until it becomes a smooth batter.

2. Place a non-stick pan over low heat. As you add some of the batter into the pan, immediately swirl it around so that it becomes a thin layer.

Cook it until it's dry and turns slightly brown, then release any air bubbles by poking them with a fork.

3. Coat it with butter and sprinkle brown sugar and crushed peanuts

You can also add peanut butter or corn if you'd like.

4. Carefully fold it in half and remove it from the pan

Repeat steps two and three with the rest of the batter. And serve!
