How To Make A Hearty Bowl Of Guinness Pork Stew
The perfect comfort food for a rainy day.
We decided to change up the classic beef stew recipe with pork shoulder and Guinness stout. With its pleasantly bitter note, strong dark beer works magic on a slow-cooked dish like this.
Here's the recipe:
Ingredients:
500g pork shoulder
2 medium sized carrot
2 medium sized potatoes
3-4 stalks of celery
½ yellow onion
2 cloves garlic
4 cups of chicken stock
½ bottle of Guinness stout
1 tbsp unsalted butter
Corn flour
Bay leaf
Fresh Parsley
Olive oil
Salt
Pepper
Worcestershire sauce (optional)
Preparation:
1. Cut the pork shoulder into chunks about 1-2 inches.
2. Chop carrots, potatoes, celery about the same size as the pork shoulder.
3. Prepare 4 cups of chicken stock with chicken stock cubes (prepare more just in case).
Steps:
1. Heat the olive oil on high heat in a medium-sized pot and brown the meat.
2. Once the oil is hot enough, add in the chunks of pork shoulder and saute until well-browned. Remove and set aside on a bowl.
3. Turn the heat down to medium, add in butter, chopped onions and salt. Saute for about 1 minute till the onions are slightly brown.
4. Add in finely chopped garlic and stir.
5. Add in 2 tbsp of corn flour and stir quickly for about 1 minute, add in bay leaf and stir.
6. Add in ½ bottle of stout, then add carrots, potatoes and celery, continue stirring.
7. Add in the chunks of pork shoulder and chicken broth.
8. Turn the heat back up to high and let it simmer.
9. While it’s simmering, add Worcestershire sauce(optional), salt, pepper and fresh parsley.
10. Cook, uncovered for 2 hours, stirring occasionally, until the liquid thickens and the vegetables are tender, about 1 hour.
(add in corn flour mixture if you want thicker liquid)
11. Serve immediately.
