How To Make The Perfect Crispy Skin Siew Yoke At Home

There's nothing quite like the crispy, crackling skin and juicy melt-in-your-mouth texture of the meat to set off the perfect succulent Chinese roast pork

Here's the full recipe:

Ingredients:

1kg pork belly
2 tsp nutmeg powder
1 ½ tsp salt
½ tsp black pepper
1 tbsp fresh thyme
1 tbsp salt (to rub on pork belly skin)

Steps:

1. In a bowl, mix nutmeg powder, salt, black pepper, fresh thyme.
2. Marinate pork belly with the mix.
3. Rub 1 tbsp salt on the skin of the pork belly.
4. Leave the pork belly overnight in the fridge, uncovered.
5. After marinating overnight, dust the salt off the pork belly skin.
6. Pre-heat oven at 150°C.
7. Place pork belly on aluminium foil, skin side up.
8. Bake for 40 minutes.
9. Turn oven up to 250°C.
10. Bake until skin turns dark brown.
11. Scrape off brown bits on the skin of the pork belly.
12. Repeat steps 10 and 11 about 1 to 2 times until desired texture(rough and flaky).
13. Leave pork belly to sit in room temperature for 15 minutes.
14. Cut and serve.
