Ingredients:
- 500g ground beef
- 2 tablespoons minced garlic
- 2 tablespoons parsley, finely chopped
- 2 tablespoons cilantro, finely chopped
- 2 tablespoons plain whole milk yogurt
- 2 teaspoons sumac
- 2 teaspoons allspice
- 2 teaspoons paprika
- 1 teaspoon coriander
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/4 teaspoon cardamom (optional)
- 1/2 teaspoon black pepper
- Butter, ghee, or oil for brushing

Instructions:

1. Preheat your oven to 230°C.

2. Next, soak your wooden skewers in water for 20 minutes to prevent them from burning in the oven.

3. In a large bowl, mix together the ground beef, minced garlic, parsley, cilantro, yogurt, and all the spices. Make sure they're well combined.

4. Take a skewer and shape the spiced ground beef around it, making it look almost like a sausage. If the meat doesn't stay on the skewer, refrigerate the mixture for 30 minutes to make it firm and then shape it.

5. Brush an oven wire rack or tray with ghee, butter, or oil. Place the shaped kefta skewers on the rack and coat with a generous amount of ghee, butter, or oil. When you're done, pop it in the oven to bake for about 10-12 minutes but be careful not to over-bake it, as it will dry out the meat.

6. Once it is out of the oven, cover the meat loosely with some foil for five to ten minutes. Don't close it too tight and allow some time for the juices to redistribute to prevent the meat from drying out. Then, serve with salad, rice, or naan bread, and enjoy.

6. Mapo tofu noodles

Ingredients:
- 1 tablespoon Sichuan peppercorns
- 380g silken tofu
- 2 tablespoons vegetable oil
- 500g pork, beef, or chicken mince
- 3 cloves of garlic, finely chopped
- 1 tablespoon ginger, finely grated
- 1/4 cup doubanjiang
- 1 teaspoon chili powder (or to taste)
- 1 cup chicken stock
- 2 tablespoons soy sauce
- 1 teaspoon dark soy sauce
- 1 teaspoon sugar
- 2 teaspoons corn flour mixed with 2 teaspoons water
- 1 teaspoon sesame oil
- 400g cooked noodles of choice
- 2 tablespoons finely sliced spring onion

Instructions:

1. In a dry frying pan, heat the Sichuan peppercorns on medium-high heat until you see a little bit of smoke. Turn off the heat and use a mortar and pestle to grind the peppercorns into a fine powder. Keep this aside for later.

2. Cut the tofu into small square-sized cubes and set aside for later.

3. Heat up some oil in a wok, then add in the minced meat. Break up the meat and cook for about two to three minutes. Add in the garlic, ginger, doubanjiang, and chili powder. Mix until well combined.

4. Now, add in some ground Sichuan pepper, chicken stock, soy sauce, dark soy sauce, and sugar. Let it simmer, then reduce the heat to medium and cook for another three to four minutes or until the liquid has reduced and you start to see the sauce thicken. Mix in the corn flour mixture and add the Sichuan peppercorn fine powder. If needed, season with extra salt or soy sauce.

5. Add the silken tofu to the meat and drizzle with some sesame oil. Toss the tofu and meat together, but try to be gentle so the tofu doesn't get crushed.

6. Place your noodles in a serving bowl and pour the mapo tofu on top. Finish it off by adding some spring onions and enjoy.
