[VIDEO] How To Make The Best Mandarin Orange Ice-Cream x Peanut Cookie Treat This CNY

These delectable ice-cream bites made with familiar flavours can be prepared in advance and served whenever desired:

Makes 6 servings.

Ingredients:
12 peanut cookies
12 small mandarin oranges (reserve the peel of 1 mandarin orange)
15g melted butter
200g vanilla ice-cream
5 – 8 tbsp sugar (adjust according to liking)
Toppings of your choice

Instructions:

PART A – Prepare the mandarin orange syrup
1. Peel all the mandarin oranges, saving the peel of one orange.
2. De-seed the oranges and juice them, making sure there’s no pulp.
3. Transfer the juice to a pot and add the sugar.
4. Bring to a boil and simmer on medium-high heat for 15 – 30 mins until syrupy consistency.
5. Once done, set aside and let cool.

PART B – Prepare the cookie base
1. Prepare the mandarin orange zest by removing the white pith from the peel.
2. With the pith removed, finely mince the zest.
3. Crush the peanut cookies into fine crumbs.
4. Add 1 to 2 teaspoon of the zest to the crushed cookies, and then the melted butter. Mix well.
5. Divide the crushed cookie mixture into molds of your choice.
6. Press firmly down into your molds to create an even layer.
7. Chill in the fridge to set firmly.

PART C - Assemble
1. Add the cooled mandarin orange syrup to slightly softened vanilla ice-cream and mix well. Adjust amount of syrup according to taste.
2. Remove the molds with the cookie base from the fridge. Divide the ice-cream mixture into the molds evenly.
3. Freeze them until completely set, preferably overnight.
4. Once completely set, remove them from the mold before serving. If desired, finish them off with toppings of your choice.
5. Serve immediately and enjoy!
