- 1 red onion
- 3-4 cherry tomatoes
- 1/4 cup fresh blueberries
- 1/4 cup fresh raspberries
- 1/2 avocado
- Crumbled feta
- 4 tablespoons Hellman's Blueberries & Lime salad dressing (or more! hehe)
- 2 tablespoons extra virgin olive oil
- Juice of 1 lime
Sticky Sweet Hot Nuts:
- 1/2 cup walnuts, chopped
- 2 tablespoons honey (or any syrup of choice)
- 1/3 teaspoon chilli flakes
1. Slice onions, cut tomatoes in half, cut and deseed avocado.
2. Mix together syrup and chilli flakes. Add in chopped walnuts and toss to combine.
3. Toss kale and sliced onions in a large bowl.
4. Add in dressing ingredients and toss again! Massage into kale to breakdown tough fibres.
5. Top with tomatoes, blueberries, raspberries, avocado, and crumbled feta.
