Ingredients

  • 1 cup unsalted butter, room temperature
  • 2/3 cup + 3 tablespoons granulated sugar, divided
  • 2 cups + 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract (optional)
  • Rainbow sprinkles (optional)

Instructions
  1. Preheat oven to 160°C. Line your baking sheets with parchment paper.
  2. Use a hand mixer to beat together butter and 2/3 cup sugar until combined
  3. Add in flour and blend well (add vanilla extract if you have it)
  4. Roll the dough into one-inch balls, then roll the balls in the remaining three tablespoons of sugar until lightly coated
  5. Place the balls two inches apart from each other on baking sheets, and press them down to flatten
  6. Add rainbow sprinkles at this point, or skip if you don't have any
  7. Bake for 14-16 minutes or until just slightly golden around the edges
  8. Remove from the oven and let rest for at least 10-15 minutes before eating!

With only five ingredients, these raspberry cheesecase thumbprint cookies are sure to be a hit. If you're not a fan of raspberries, just choose a jam flavour you prefer to replace the centre. But red so ong for CNY. ;)

Ingredients

  • 4 ounces softened cream cheese
  • 8 tablespoons softened salted butter
  • ½  cup + 3 tablespoons sugar
  • 1 cup + 3 tablespoons flour
  • ¼ cup raspberry jam (or any jam of your preference)
Instructions
  1. Beat cream cheese and butter until light and fluffy
  2. Add the sugar and beat well
  3. Add in flour, a bit at a time, until incorporated
  4. Cover bowl with plastic wrap and place in the fridge for at least 45 minutes, or up to two hours
  5. Preheat oven to 190°C, 30 minutes before baking
  6. Line your baking sheet with parchment paper, then scoop one tablespoon sized balls of dough and place them on the tray. Lightly press your thumb in the centre and fill the indentations with 1/2 teaspoon of jam.
  7. Bake in the oven for 11 to 12 minutes, or until just golden at the edges.
  8. Cool completely before eating

3. Lemon Shortbread Cookies

These lemon shortbread cookies are a fan favorite, and once you try them, you'll see why! They're tender, buttery, and filled with bright lemon flavor.

Ingredients

  • ½  cup softened butter
  • ⅓  cup sugar
  • Zest of one medium lemon
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh thyme leaves, chopped
  • 1¼ cups all-purpose flour
  • ¼ teaspoon sea salt
Instructions
  1. Preheat the oven to 175°C and line a baking sheet with parchment paper
  2. Cream the butter with an electric mixer. Add the sugar and beat until fluffy. Next, add the lemon zest, lemon juice, and thyme, and mix again. Finally, add the flour and salt, and mix until just combined. Turn the dough out onto a floured surface and flatten into a one-inch disk. If the dough is sticky, wrap and chill for 15 to 30 minutes until firm but still pliable.
  3. Roll the dough on a lightly floured surface until about one-quarter-inch thick. Use cookie cutters to cut out desired shapes. Transfer to the baking sheet and bake for 10 to 14 minutes or until the edges are lightly browned.
  4. Remove from the oven and transfer the cookies to wire racks to cool

Ingredients

  • 1 cup peanut butter
  • ½ cup sugar
  • 1 egg
Instructions
  1. Preheat oven to 180ºC
  2. Mix together the peanut butter, sugar, and egg
  3. Scoop out a spoonful of dough and roll it into a ball. Place the cookie balls onto a nonstick baking sheet.
  4. Use a fork to flatten the cookie balls and make a criss-cross pattern
  5. Bake for 8-10 minutes or until the bottom of the cookies are golden brown
  6. Remove from baking sheet and cool

  • 1 box red velvet cake mix
  • 2 eggs
  • ⅓ cup vegetable oil
  • powdered sugar, for topping
Instructions
  1. Preheat the oven to 190°C
  2. Mix everything except the powdered sugar into a bowl
  3. Spoon into balls and roll in the powdered sugar
  4. Place on baking sheet, leaving about 2 inches between cookies. Use bottom of a glass or measuring cup to flatten evenly.
  5. Bake for 8 to 10 minutes until cookies brown slightly at the edges
