Drawing inspiration from his Spanish heritage and techniques learned from working at multiple top kitchens around the world, Chef Aitor Jeronimo Orive settled in Singapore with a restaurant serving pan-European cuisine.

You'll be able to watch the view overlooking the Singapore river and Marina Bay as you savour a multi-course omakase meal with fresh ingredients like burnt cheese, oxtail, and delicately grilled seafood, paired with an interesting selection of beverages from Spain. 

3. Jay Fai - Bangkok, Thailand | 1 MICHELIN star

At Jay Fai, you can savour street food at its best with their signature crispy golden-brown crab omelettes, stuffed to the brim with juicy crab meat. If you're a noodle lover, don't miss out on trying their Thai stir-fried rice noodle and seafood drunken noodle.

Although IGNIV is a modern Swiss cuisine fine-dining restaurant, the ambience you get dining here is more lively than the usually quiet and proper setting. Instead, diners are greeted with a variety of snacks the moment they walk in, and the magic continues throughout the meal.

They do something a tad bit different at IGNIV — instead of serving individual dishes in each course, they serve multiple dishes in the centre of your table for everyone to share. Be sure to try their signature dishes, the beef tartare and gourmet chicken nuggets.

5. Duddell's - Hong Kong | 1 MICHELIN star

Dubbed one of the best restaurants in Hong Kong, experience Cantonese fine dining and dim sum at their highest level. What's unique here is that you can have a world-class siew mai in one hand, with a classy cocktail in another.

Plus, you'll be surprised to find that they also have regular art shows and screenings, which you can enjoy as you fill your tummy with delicious traditional Cantonese dishes. How cool! 

6. Sushi Saito - Hong Kong | 1 MICHELIN star

Securing a seat at Sushi Saito is almost impossible as they don't take bookings online and their phones are only said to be answered on the first day of the month. But, the wait will be definitely worth it when you try the masterful-crafted Edomae-style sushi using the best seasonal seafood by Chef Takashi Saito.

What sets their sushi apart from the average is that they use rice sourced from Akita and Nagano, which is cooked in spring water from Kagoshima and dressed in a special vinegar blend. Additionally, the array of delicacies they offer such as sea urchin, eel, octopus, mackerel, and a variety of cuts of tuna will have you enjoying different textures and flavours that the sea has to offer.

7. Sukiyabashi Jiro Roppongiten | 2 MICHELIN stars

Sushi in Japan is already out of this world. But sushi at Jiro's is at a whole other stratosphere. This particular outlet is run by Takashi Ono, the second son of the famous Jiro Ono, who was featured in Jiro Dreams of Sushi, a documentary that catapulted Edomae-style sushi to fame.

Carefully curating each dish they serve, you can expect changes of flavour that will linger in your mouth as the meal progresses. Relish in a range of Japan's finest fare starting from subtle flavours of white fish, redfish, and chu-toro, followed by richer flavours from gizzard shad, mackerel, or shrimp.

8. Joel Robuchon - Tokyo, Japan | 3 MICHELIN stars

If you're looking for a place away from the bustling city of Tokyo, where you can enjoy a fancy french 'Château' interior that has attentive and luxurious service, then give a visit to Joel Robuchon. The whole experience is known to be a night to remember, from the deco to the food served. 

Caviar lovers will be impressed with the Caviar impérial, which is an edible work of art. And, don't forget to order their signature masterpiece dishes, the freshwater prawns ravioli and black truffles.

Here's how to join:
